There are many stories of how Pad Kee Mao Drunken Noodles became known as Drunken Noodles, due to the fact that there is no alcohol in the recipe. One theory is that they are so spicy, those partaking get drunk in the process of trying to quench their thirst. Pad Kee Mao Drunken Noodles is traditionally made with wide rice noodles, however we are using our Salt-free UDON noodles. They soak up the sauce and create wonderful richness in the dish. You can use either Soba or Udon in this recipe.

You can control the texture of the ramen (this isn’t cheap mushy ramen) by cooking it to a soft texture (2:30min) or chewy hard texture (2:00min) depending on how long you cook the noodles. The noodles stand up to the broth and pull in that great miso flavor with every bite.
