HOW TO MAKE

Shoyu some history
Shōyu (醤油, “soy sauce”) ramen has a clear brown broth, based on a chicken and vegetable (or sometimes fish or beef) stock with plenty of soy sauce added resulting in a soup that is tangy, salty, and savory yet still fairly light on the palate.
Shōyu ramen (醤油ラーメン, “soy sauce ramen“) is the default variety in Japan, considered the “classic” ramen. It has a brown broth, based on pork and chicken stock with plenty of soy sauce added resulting in a soup that is tangy, salty, and savory yet still fairly light on the palate. The noodles are thin and straight, rather than the curly noodles used in the other styles. A popular variation of this style which originated in Ippudo involves adding garlic to the broth, resulting in a bold broth.
