Ingredients:
- Turkey carcass (from your leftover Thanksgiving bird)
- 1 onion, quartered
- 3 cloves garlic, smashed
- 1-inch piece of ginger, sliced
- 2-3 tbsp soy sauce (adjust to taste)
- 2 tsp sesame oil
- 6 cups water
- Hakubaku ramen noodles
- Your favorite ramen toppings (soft-boiled eggs, green onions, nori, etc.)
Instructions:
All of this is to taste as its as this tradition will be new and some like a heavier broth taste
- Simmer the Broth: Place the turkey bones in a large pot and cover with water. Add onion, garlic, and peeled ginger, and bring to a boil. Lower the heat and simmer for 2-3 hours, until the broth is rich and flavorful.
- Strain & Season: Once the broth is done simmering, strain out the bones and vegetables. Add soy sauce and sesame oil to taste. If you like a bit of extra richness, add a dash of miso paste.
- Prepare the Ramen Noodles: Cook the Hakubaku ramen noodles according to the package instructions. Drain and set aside.
- Assemble the Ramen: In bowls, add the cooked ramen noodles, ladle the hot turkey broth over them, and garnish with your favorite toppings like soft-boiled eggs, green onions, and nori.
