Why It’s Called “Yaki” Udon

Ingredients

2 servings udon noodles

1 tablespoon sesame oil

½ cup sliced cabbage

¼ cup sliced carrots

½ cup sliced mushrooms

½ cup protein of choice (chicken, shrimp, pork, or tofu)

1 tablespoon mirin

1 teaspoon sugar (optional)

Instructions

Cook the Udon Noodles
Boil udon according to package instructions until just tender. Drain well and set aside. -
Stir-Fry the Protein
Heat sesame oil in a large pan or wok over medium-high heat.
Add protein and cook until lightly browned and cooked through. Remove and set aside if needed. -
Cook the Vegetables
In the same pan, add cabbage, carrots, and mushrooms. Stir-fry until slightly softened but still crisp. -
Add the Noodles
Add cooked udon noodles to the pan, gently loosening them as they heat. -
Season and Toss
Return protein to the pan. Add soy sauce, mirin, and sugar if using.
Toss everything together until noodles are evenly coated and glossy. -
Finish & Serve
Remove from heat and garnish with green onions, sesame seeds, or bonito flakes.
Serving Tip
Yaki udon is best enjoyed straight from the pan while hot. For extra depth, try adding a splash of dashi or oyster sauce while stir-frying, or finish with a squeeze of lemon for brightness.
