Zaru Udon is a refreshing, chilled udon noodle dish traditionally enjoyed during warmer months. Cooked udon noodles are rinsed in cold water, then served cold on a bamboo tray (zaru) alongside a savory dipping sauce. Light, clean, and satisfying, zaru udon highlights the smooth texture and natural flavor of the noodles.
Why It’s Called “Zaru” Udon
The word “zaru” (ざる) refers to the bamboo draining tray traditionally used to serve chilled noodles. Instead of being placed in broth, the udon are presented on the zaru and dipped bite by bite into a concentrated sauce called mentsuyu. The name reflects both the serving style and the dish’s cool, minimalist nature.
Classic Zaru Udon Recipe

Ingredients

2 servings udon noodles

Ice water (for chilling noodles)
For the Dipping Sauce (Mentsuyu):

¾ cup dashi stock (cold)

¼ cup soy sauce

2 tablespoons mirin

Instructions

Cook the Udon Noodles
Boil udon according to package instructions until tender but chewy. -
Chill the Noodles
Drain immediately and rinse under cold running water to remove excess starch.
Transfer to ice water and chill thoroughly. Drain well. -
Prepare the Dipping Sauce
In a small bowl, combine dashi, soy sauce, and mirin. Chill until ready to serve. -
Assemble
Arrange chilled udon neatly on a bamboo tray or plate.
Serve the dipping sauce in small individual cups. -
Finish & Serve
Top noodles lightly with shredded nori. Serve with green onions and ginger on the side.

Dip just a few strands of udon at a time into the sauce to enjoy the balance of flavor without overpowering the noodles. Zaru udon pairs beautifully with tempura or a simple cucumber salad for a light summer meal.
