Dashi Recipe
Ingredients:
- 4 packs Hakubaku Ramen Noodles
- 8 cups water
- 4 pieces kombu (dried kelp), about 4 inches each
- 1 cup bonito flakes
- 1/4 cup soy sauce
- 2 tablespoons mirin (Japanese sweet rice wine)
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 tablespoon sesame oil
- 2 green onions, thinly sliced
- 4 soft-boiled eggs, halved
- 1 cup sliced bamboo shoots
- 1 sheet nori seaweed, cut into strips
- Chashu pork slices or grilled tofu (optional)
Instructions:
- In a large pot, combine water and kombu. Bring to a simmer over medium heat and let it simmer for 10 minutes. Avoid boiling the water as it can make the broth bitter.
