Sometimes snacking hits you late in the day when you’re hungry..and the last thing you want to be is in the kitchen. Here are 5 quick ramen noodle easy 1-pot meal ideas you can make quickly to fight off those hunger pains. Now, this list is not a definitive list but reflects what kinds of ramen dishes we like. Well..at least this month…
Now we present our staff 5 favorite quick ramen noodle meal ideas:
1. Creamy Mayo Style Ramen
Kewpie Japanese mayonnaise is not like regular US mayonnaise as it starts with Japanese egg yolks to get its base. Japanese mayonnaise has a much smoother custard-like texture. This ramen hack is so yummy and smooth it will make you love ramen in a whole new way!
How To Make (takes 5min)
- Start with Shoyu or Shio Authentic ramen for this.
- Cook the ramen noodles for 1:30 minutes but leave out the soup packet
- In a separate bowl, mix together the soup packet, about 1/2 teaspoon of minced garlic, a healthy squirt of Japanese mayo, and an egg.
- Once the noodles are done, pour the boiling water from the pot into the serving bowl with the soup mix, egg, and mayo paste.
- Stir for about a minute to get all the flavors melded.
- Top with chopped scallions or some furikake if you like. Enjoy!
2. Fast & Easy Vegetarian Dan Dan Noodles
DanDan noodles typically have some protein as part of the recipe, but, being we like to eat light during the hot summer months this works! Use our Umami Shoyu ramen kit to make this tasty and fresh.
What you need:
- 1pk Kaedama noodles
- Chopped green onions
- 1 garlic clove (minced)
- 1 teaspoon sesame seeds
- 1 tablespoon creamy peanut butter
- 1 teaspoon Hoisin Sauce
- Shredded cucumber
- 4 tablespoons of sesame oil
How to make:
- Cook noodles 1:30min, drain all but 3 tablespoons of water
- In a separate pot, heat up the oil.
- Use a heatproof bowl and add in the rest of the ingredients (but not the cucumber)
- Add oil slowly to a heatproof bowl while stirring the ingredients
- Add noodles and keep stirring until everything is mixed up well.
- Top with cucumber, additional sesame seeds, or cilantro if you prefer.
3. Quick Pad Thai
Pad thai typically includes some sort of protein (like chicken or tofu). Our version is much easier and quicker and takes about 4 minutes. To get the chicken flavor, use our Authentic Shio Ramen kit.
How to Make
Microwave for 1:30-2:00 a mixture of:
- 1 tsp peanut butter
- 1/2 tsp soy sauce
- 1/4-1/3 cup coconut milk
- pinch of fresh minced ginger
- Sriracha
- and the spice packet
Cook the noodles for 1:30. While the noodles are cooking, make the microwaved sauce. Stir 1/2 way through cooking in the microwave. Once the noodles are done, add the mixture to the noodles. Top with cilantro and some crushed peanuts. Enjoy!
4. Red Curry Noodles
Quick and easy to make with our Authentic Miso ramen set. Simple and creamy with some coconut milk and veggies. Healthy too so it’s great for a late-night snack as well.
How to Make
Add Thai red curry paste, sliced bell pepper, and a splash of coconut milk.
Sprinkle some garlic and ginger powder in, then add some basil/scallion/peanuts on top.

5. Pan Fried Noodles (stirfry)
Get the pan or wok out for a single dish that is easy to make using our Shio Ramen kit. We have to admit that making a late-night stirfry is the quickest way to clear the hunger pangs. In fact, we have a set of small pans in the test kitchen for single-serve meals.
How to Make
- Cook the noodles for 1:00 and drain water, set aside.
- Heat up a small skillet and add 4 tablespoons of sesame oil (or canola oil).
- Cut up some veggies (onion, broccoli, red bell pepper) in small chunks or julienned slices and cook fast.
- Once the oil is hot add the veggies and stir, stir, stir until they get slightly soft.
- Add in the noodles and keep stirring.
- Add in 1/2 the spice packet, and keep stirring.
- Top with green onion or add in some cooked protein from the fridge if you want at the end to heat them up.
- Enjoy!
