The Umami Shio ramen soup pack acts as a seasoning pack that gives this dish a faux chicken flavor. Crispy pan-fried noodles underneath give it the crunch you will just love!
Like crispy noodles and veggies? Pan-fried Shio Crispy Ramen with fresh vegetables includes mushrooms, greens, broccoli, ginger, and more. Makes great use of our Umami Shio Fresh Ramen kits. So SIMPLE!
Add a shoyu ramen egg, daikon radish, green onion, nori, and some sesame seeds if you like. We added some chili oil for a bit of a kick!
Shio in Japanese translates to “salt”. It’s the oldest flavor of ramen that includes multiple spices and can include a chicken base- but our soup pack does not include any chicken stock at all! Pair this with fresh ramen noodles from Japan- and you are in stir fry heaven!
Makes 2 servings.

Ingredients:
For the Crispy Ramen
- 2 packages of Hakubaku Fresh Ramen Umami Chicken Shio Flavor
- 2 tbsp oil
- 1 tbsp soy sauce
For the Stir Fried Veggies
- 2 tbsp oil
- 4 cloves garlic, minced
- 2 tsp ginger, minced
- 2 carrots, julienned
- 1 red bell pepper, sliced
- 2 cups any mushrooms (I used shitake and seafood mushrooms) 2 cups broccoli, chopped
- 2 cups bok choy, leaves separated
- 2 Hakubaku Umami Chicken Shio Soup Packets
- 1⁄2 cup water
- 1 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tsp sugar
For serving
Preparation
- In a large wok or skillet over medium-high heat add the oil and the noodles and cook until the noodles turn golden brown and crispy. Add the soy sauce and stir the noodles until mixed thoroughly. Remove noodles from heat and set aside.

- In the same wok or skillet over medium-high heat add the oil, garlic, ginger, scallions, and carrots. Cook for 3 minutes stirring frequently until the garlic is fragrant. Add the red bell pepper and mushrooms and cook for 5 minutes until the mushrooms are golden and tender, stirring frequently. Add the broccoli, bok choy, Hakubaku Umami Chicken Shio Soup Packets, water, soy sauce, rice vinegar, and sugar. Cook for 5 minutes more until the vegetables are tender stirring frequently.

- On a plate add the noodles and top with the stir-fried vegetables. Top with scallions. Serve immediately.
